How Fudge Became an American Classic

American-style fudge has a fascinating history that dates back to the late 19th century. It was first discovered in a short letter written by Emelyn Battersby Hartridge, a student at Vassar College in Poughkeepsie, New York. In the letter, Hartridge mentioned that a schoolmate’s cousin had made a batch of fudge in Baltimore, Maryland. Intrigued by the treat, Hartridge obtained the recipe and, in 1888, prepared it for the Vassar College Senior Auction. The rich, creamy confection quickly became a hit at the school, and its popularity spread throughout the campus in the years that followed.

As word of this delicious fudge spread, it made its way to other women’s colleges, where it became a beloved treat among students. By the late 19th century, fudge had reached Mackinac Island in Michigan, where local shops began to produce their own versions of the candy for summer vacationers. The tradition of making and enjoying fudge continued to grow, eventually becoming a staple of American confectionery culture, especially in tourist destinations and small-town candy shops.
